The vinification mash tank with a butterfly mixer is a high-quality stainless steel vessel designed for professional processing of grapes and fruit in wineries and distilleries. It is used for maceration, fermentation, and preparation of raw materials for wine and for fruit distillates.

The interior surface is polished (BA – bright annealed finish), allowing easy cleaning and preventing residue buildup. The exterior is marble-finished, providing increased mechanical resistance and a professional appearance in modern wineries and distilleries. For optimal mixer performance and efficient mixing, the tank must be filled to at least 50% of its capacity.

Due to its compact design without a punching-down cylinder, the vinification tank with internal mixer is particularly suitable for lower wine cellars and rooms with limited height, where the use of conventional punching-down vinificators is not possible or is difficult.

APPLICATION IN WINERIES AND DISTILLERIES

The vinification mash tank is designed for a wide range of applications:

  • maceration of white and red grape varieties

  • processing of crushed fruit for distillation

  • preparation of raw materials for fruit distillates and spirits

  • controlled alcoholic fermentation processes

  • storage and stabilization of wine

In distilleries, it is primarily used for preparing fruit mash, where uniform mixing is essential for optimal extraction of sugars, aromas, and volatile compounds that influence the quality of the final distillate.

BUTTERFLY MIXER AND MIXING TECHNOLOGY

The internal butterfly mixer enables gentle but highly efficient homogenization of the mash, ensuring uniform extraction of color, aroma, and tannins from grape skins and fruit. Continuous and controlled mixing improves raw material utilization, stabilizes the fermentation process, and enhances the overall quality of the final product.

ADVANTAGES OF THE VINIFICATION MASH TANK

  • high extraction of color, aroma, and tannins

  • efficient and uniform mixing of the mash

  • double cooling or heating jacket for precise temperature control

  • possibility of cold maceration for improved aromatic profile

  • use in wineries and distilleries for wine, must, and fruit mash

  • multi-purpose use: maceration, fermentation, and storage

  • easy cleaning due to smooth internal surface

INSTRUCTIONS FOR USE

Before use, the tank must be properly cleaned with food-safe cleaning agents. The vinification tank is then filled with mash to start the maceration and/or fermentation process. The butterfly mixer is controlled via the control cabinet, where automatic or manual operation and mixing intervals are set. During the process, the temperature of the mash should be regularly monitored via the cooling/heating jacket and adjusted according to the desired technological outcome. The tank can optionally be equipped with a bottom mixer, which prevents sedimentation of solids, ensures more uniform emptying, and increases raw material utilization. After emptying, the tank must be thoroughly cleaned and prepared for the next production cycle according to winery and distillery hygiene standards.
